We will take a literal trip to Eastern Singapore to savour several cuisines throughout the night.
The challenge is to keep within the same location, to minimise walking time, but to still maximise the taste level of each dish.
With this, we are going for one location only at this time: Tampines Century Mall.
First on deck is a light snack of steak bites at Beef Bro in Basement 1 of Century Square, targeting the well reviewed Mentaiko Beef Cubes. Certified air flown from Australia, their signature flame grilled creations will be a hearty, protein rich amuse-bouche to open up our palates for the rest of the night.

For the main course, we have an option of noodles, either Japanese or Hokkien, that are both tried and tested by yours truly, and both guaranteed to satisfy.
The ramen noodles on the list are Kanada-Ya’s limited edition Truffle Ramen, among other offerings. Touting themselves as the “number 1 ramen restaurant in London, according to The Telegraph London”, it is currently top 4 on my personal list of ramen noodles in Singapore. The broth is thick and creamy, with that distinctively Japanese sesame and umami taste.

If we go for Hokkien Mee, it will be from Ah Po Hokkien Mee at The Food Market in Century Square. Their sauce is thick but not cloying, a merry mix of shrimp and egg and squid, and everything else all together in the best possible, seafood hokkien mee way. It’s halal, so no pork and no lard either. Bonus points for this location is they also offer other tasty options such as Kway Teow and Fried Oysters.

For dessert, we can go for Beard Papas (cream puffs!), Krispy Kreem (donuts!), or Llaollao (froyoooos!!!).
